Hello! Welcome to Freshly Milled Recipes where Every Recipe Starts with Freshly Milled Flour! Today I’ll be sharing my newest recipe for my Einkorn Chocolate Chip Cookie Bars (AKA Einkorn Blondes)!
Ingredients Needed
- Einkorn Wheat Berries (milled)
- Unsalted Butter (melted)
- Brown Sugar
- Sugar
- Egg
- Vanilla Extract
- Salt
- Semi-sweet Chocolate Chips

For this Einkorn Blondes recipe, I used Organic Einkorn Wheat Berries sourced from Azure Standard. Read more about where and why I source my wheat berries here

Step 1. The first thing I did was measure out my Einkorn berries. The weight is the same before and after milling, but it’s easier to measure prior to milling. Once it was weighed, I ran it through my Mockmill Pro 200 on level 1.

Step 2. Next I placed my butter in a stainless steel measuring cup on my stove to melt.

Step 3. Next I got started on the cookie batter. Add together the Brown Sugar, Sugar and Salt. Mix until combined.

Step 4. Then I added in my melted butter and mixed thoroughly.

Step 5. Next I added in the egg and vanilla extract. And mixed it again.

Step 6. Then I added in my Freshly Milled Einkorn Flour. Gently mix in until fully incorporated.

Step 7. Finally we fold in the chocolate chips!

Step 8. Then I lined my baking dish with parchment paper. And then used my spatula to transfer the cookie dough into the baking dish. Simply bake and enjoy!

- Bake at 350 for 25-30 minutes (or until golden brown). Let cool slightly and enjoy!
Notes
- Room Temperature: Store in an airtight container for up to 3 days. They’ll stay soft and chewy.
- Refrigerator: For longer freshness, refrigerate up to 1 week. Bring to room temperature before serving.
- Freezer: Freeze individual bars (wrapped well) for up to 3 months. Thaw at room temperature or warm briefly in the oven for that fresh-baked feel.
