Cremita (Cream of Wheat) Made with Freshly Milled Flour

Cremita is a beloved Puerto Rican breakfast dish — a warm, creamy porridge, also known as Cream of Wheat, that’s both comforting and simple to make. Cremita (Cream of Wheat) made with freshly milled flour is one of my kids favorite breakfast staples that is simple, healthy and filling!

Hello! Welcome to Freshly Milled Recipes where Every Recipe Starts with Freshly Milled Flour! Today I’ll be sharing my newest recipe for my Cremita (Cream of Wheat) made with Freshly Milled Flour

Because I am on a mission to make using Freshly Milled Grains accessible to everyone by providing recipes that anyone can follow, you’ll notice all of my recipes using grams instead of cups! Yes, this means you’ll need a food scale, but you’ll be so glad you did! The more you get into using freshly milled flour, you will see the importance of using exact amounts if you want a consistent product.

Cremita reminds me of my childhood. It’s warm, creamy and tastes like heaven in a bowl! And its good for you!

For this Cremita recipe, I used Organic Einkorn Wheat Berries sourced from Azure Standard. This is easily interchangeable though, I have also used Hard Red Wheat Berries, Hard White wheat berries, and Soft white wheat berries. All of them work well with this yummy cream of wheat recipe.

First, I used my Mockmill Pro 200 to mill the grains into flour.

Second, I added in my milk and stirred almost constantly for 6-8 minutes. It will almost feel like it’s not going to get thick until it does, just keep stirring.

You can sweeten it with either a small amount of honey OR brown sugar. (Not necessarily both at the same time.)

Once it’s nice and thick and creamy, I serve it warm. I like to eat mine plain, but my kiddos all have their own versions. One likes it topped with honey and cinnamon, another with frozen blueberries (fresh blueberries would probably be better, but he’s three so he loves frozen blueberries!) and another with just honey.

This is such a simply, but yummy breakfast staple in my home.

Ingredients
  

  • 1 cup Wheat Berries (Any Variety – I used Einkorn for this recipe, but you could also use Hard Red, Hard White or Soft White)
  • 4 cups Milk (I used Whole, Organic)

Equipment

  • 1 Grain Mill
  • 1 Small Pot
  • 1 Whisk

Method
