Hello! Welcome to Freshly Milled Recipes where Every Recipe Starts with Freshly Milled Grains! Today I’ll be sharing my newest recipe for Banana Bread made with Freshly Milled Flour

Because I am on a mission to make using Freshly Milled Grains accessible to everyone by providing recipes that anyone can follow, you’ll notice all of my recipes using grams instead of cups! Yes, this means you’ll need a food scale, but you’ll be so glad you did!

The more you get into using freshly milled grains, you will see the importance of using exact amounts if you want a consistent product. This banana bread recipe is one of my all time favorites!

For these delicious muffins, I used Organic Soft White Wheat Berries sourced from Azure Standard.

The first step is to mash the bananas with a fork.

Then I added in the sugar.

I melted the butter on the stove in my stainless steel measuring cup. Then I added the melted butter into my banana and sugar mixture.

Then once it cooled slightly I added in the egg, vanilla extract, salt and baking soda and mixed it all together.

Then, I used my Mockmill Pro 200 to mill the grains into flour directly into my bowl of wet ingredients and mixed it all together.

Now that the mixture is ready, I preheated my oven to 325. I used avocado oil to spray my bread pan. Poured the mixture into the pan.

Once the oven got to the correct temperature, I placed the bread pan in the oven to cook for the 55 minutes. When I took it out from the oven, I let it cool slightly and then enjoyed my warm slice of banana bread!

Ingredients
  

  • 2-3 Bananas (brown/ripe)
  • 175 g Sugar
  • 1/3 cup Butter (76g)
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1 pinch Salt
  • 210 g Soft White Wheat Berries (milled)

Equipment

  • Food Scale
  • Grain Mill
  • Bowl
  • Fork
  • Spatula

Method
 

  1. Preheat Oven to 325.
  2. Mash the bananas.
  3. Add the sugar and butter. Mix thoroughly.
  4. Add in the egg, vanilla extract, salt and baking soda and mixed it all together.
  5. Mill the soft white wheat berries. (I milled mine directly into the wet ingredient bowl) And then mix it all up!
  6. Spray bread pan to prevent sticking. (I used avocado oil) Then Pour the freshly milled flour banana bread mixture into the pan.
  7. Once the temp is up to 325, place the baking pan on the middle rack and cook for 55 mins.
  8. Let cool slightly before eating. Enjoy!

    This is a five star banana bread recipe. This was the best banana bread I’ve ever made. This is now my go to recipe. And it was so easy.
