Easy Jumbo Banana Muffins made with Freshly Milled Flour

Freshly Milled Whole Wheat Banana Muffins

Hello! Welcome to Freshly Milled Recipes where Every Recipe Starts with Freshly Milled Grains! Today I’ll be sharing my newest recipe for Easy Jumbo Banana Muffins made with Freshly Milled Flour!

Ingredients Needed

  • Ripe Bananas
  • Sugar
  • Butter
  • Egg
  • Vanilla Extract
  • Baking Soda
  • Salt
  • Soft White Wheat Berries (milled)

Because I am on a mission to make using Freshly Milled Grains accessible to everyone by providing recipes that anyone can follow, you’ll notice all of my recipes using grams instead of cups! Yes, this means you’ll need a food scale, but you’ll be so glad you did!

For these delicious muffins, I used Soft White Wheat Berries sourced from Azure Standard. The first step is milling the grains into flour. I used my Junior Wondermill Deluxe Hand Mill to get a good arm workout in while prepping for my yummy muffins. You could also use an electric grain mill such as the Wondermill Electric Grain Mill.

Next, I mashed the bananas with my kitchen aid mixer.

I melted the butter on the stove with my stainless steel measuring cup. Then I added the melted butter into my banana and sugar mixture.

Then once it has cooled slightly, I added in the sugar, baking soda, salt, vanilla extract, and egg. Mix until smooth.

Then I mixed in my freshly milled flour.

Now that the mixture is ready, I preheat the oven to 325. I used avocado oil spray to spray my muffin tin pan or you could use muffin liners. Then poured the mixture into the pan.

Once the oven is up to temperature, I placed the jumbo muffin pan in the oven to bake for 35 minutes.

Let it cool slightly when you take it out and then enjoy nice and warm!

Jumbo Banana Muffins made with Freshly Milled Flour

Prep Time 10 minutes
Cook Time 35 minutes
Servings: 6 Jumbo Muffins
Course: Breakfast, Dessert, Snack

Ingredients
  

  • 2-3 Bananas brown/ripe
  • 3/4 cup Sugar 175g
  • 1/3 cup Butter 76g
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/2 tsp Baking Soda
  • 1 pinch Salt
  • 210 g Soft White Wheat Berries milled

Equipment

  • 1 Grain Mill
  • 1 Kitchen Aid Mixer optional

Method
 

  1. The First step is to mill your flour. I used my hand grain mill to mill my soft white wheat berries.
  2. Next, place ripe bananas in the mixer (or mash with a fork if you don't want to use a mixer)
  3. Melt the butter on the stove. I used my stainless steel measuring cup. Then I added the melted butter into my mashed banana.
  4. Then I added in the Sugar.
  5. Then once it has cooled slightly, I added in the eggs, vanilla extract, salt, and baking soda. Mix until smooth.
  6. Then I mixed in my freshly milled flour.
  7. Now that the mixture is ready, I preheat the oven to 325. I used butter in this recipe but you could use avocado oil spray or you could use muffin liners. Then poured the mixture into the pan.
